When people ask us, “Are those Hatch chiles?” our answer is simple: we prioritize local produce. While Hatch, New Mexico is famously known as the “Chile Capital of the World,” our focus with chile roasting is on keeping it fresh. The truth is, freshness makes all the difference. Even the best chile loses its peak flavor if it travels too far from the field. That’s why we prefer Colorado-grown chiles. They go from farm to flame in the shortest time possible, ensuring unbeatable taste and quality.

While “Hatch” is a popular name, often seen on bright yellow grocery store labels, it’s just that – a name. Colorado grows many of the same chile varieties as New Mexico, and when it comes to flavor, freshness always wins.
Imagine taking freshly picked Brighton chile to Hatch; it wouldn’t taste the same because it would lose that fresh-from-the-field factor during transport. That’s why we stay local whenever possible. Most importantly, optimal chile roasting is about fresh.

More Than Just Mild, Medium, Hot, and Extra Hot
Many people think there are only four types of chile: Mild, Medium, Hot, and XX Hot. The reality? Each heat level can contain numerous unique varieties with distinct flavors and spice profiles. - Anaheim Mild: Smooth, mild heat with a slightly sweet flavor—great for stuffing or roasting.
- Anaheim Medium: A step up in spice, perfect for adding a kick to salsas and stews.
- Anaheim Hot: Bold and zesty, ideal for spice lovers who enjoy rich chile flavor.
- Big Jim: Known for its large size and balanced heat, perfect for chile rellenos.
- Mirasol – Mosco (Mexican Hot): A vibrant, earthy heat with a smoky undertone.
- Red Mirasol – Mosco: Bright, fruity heat with a slightly smoky finish, excellent for drying and making red chile sauces. Pro Tip: Did you know that dried Red Mirasol peppers are called Guajillo Chilies? Guajillos are one of the most popular ingredients in Mexican cuisine.
- Poblano (Ancho): Mild with rich, complex flavors; fantastic for mole sauces and our favorite for Chile Rellenos and our must-have Poblano Cream Sauce.
- Dynamite: True to its name, it packs a fiery punch for those who crave serious heat.
- Jalapeño: Crisp, medium/hot heat with a fresh, bright flavor—perfect for salsas, nachos, and pickling.
